Step 1
Into a mixing bowl, add your
Avocados (4)
chopped
Red Onion (1)
,
Garlic (1 clove)
,
Green Bell Pepper (1)
,
Fresh Cilantro (2 Tbsp)
,
Sun-Dried Tomatoes (4.5 oz)
, and
Salt (to taste)
,
Freshly Ground Black Pepper (to taste)
and mix everything with a good stir.
Step 2
On a single
Spring Roll Wrappers (to taste)
sheet, put on your avocado mixture. Brush the edges of the wrapper with a little bit of
Egg (1)
, and wrap it up until it is sealed completely. Make about as many of these egg rolls as you desire
Step 3
In a big wok, add enough
Oil (as needed)
to deep fry your egg rolls. Put each roll in the oil and fry until a golden and crisp texture is formed.
Step 4
Transfer into a separate dish and drain off any excess oil. Serve and Enjoy!
