Into a mixing bowl, add your Avocado (4), chopped Red Onion (1), Garlic (1 clove), Green Bell Pepper (1), Fresh Cilantro (2 tablespoon), Sun-Dried Tomatoes Packed in Water (125 gram) and Salt and Pepper (to taste) and mix everything with a good stir.
On a single Spring Roll Wrappers (to taste) sheet, put on your avocado mixture. Brush the edges of the wrapper with a little bit of Egg (1), and wrap it up until it is sealed completely. Make about as many of these egg rolls as you desire
In a big wok, add your enough Oil (to taste) to deep fry your egg rolls. Put each roll in the oil and fry until a golden and crisp texture is formed.
Transfer into a separate dish and drain off any excess oil. Serve and Enjoy!
