Step 1
Prepare charcoal grill set up for 2 zone fire. Pour the hold coal on one side of the grill and leave a void on the opposite.
Step 2
Place ears of
Sweet Corn (8)
in husk on indirect side of grill for 10-15 minutes.
Step 3
Peel back the husk and remove corn silt. Place directly over hot side of grill to char, 4-5 minutes rotating as necessary.
Step 4
Remove husk end from each ear or corn and use a knife to cut off the corn into a large bowl.
Step 5
Combine
Sour Cream (1/2 cup)
and
Cream Cheese (1/2 cup)
until smooth.
Step 6
Add cream cheese mixture,
Red Onions (1/2 cup)
,
Red Bell Peppers (1/2 cup)
,
Bacon (8 slices)
,
Jalapeño Peppers (3)
, and
Cheddar Cheese (1 cup)
. Fold ingredients into corn and season with
All-Purpose Spice Rub (1 tsp)
.
Step 7
Garnish with sliced jalapeño and
Scallions (to taste)
. Enjoy!
