Cooking Instructions
1.
In a large pot of salted water, boil Potatoes (8) until fork-tender, about 20 minutes.
2.
Once potatoes are fork-tender, drain all water from the pot. Add in Oat Milk (1 cup), Butter (2 Tbsp), White Truffle Oil (2 Tbsp), and Sea Salt (1 tsp).
3.
Using an electric hand mixer on medium speed, begin to whip potatoes for about 1-2 minutes, fully incorporating each ingredient.
4.
Once everything is fully incorporated, add in Fresh Parsley (4 Tbsp) and Grated Parmesan Cheese (4 Tbsp), continuing to beat potatoes on medium speed until smooth.
Author's Notes
You can mash by hand, but I find that using an electric hand mixer to whip the potatoes creates a super creamy and delicious mash in a fraction of the time.
