Step 1
First, skin your
Whole Chicken (1)
and cut it into small pieces. In a bowl, add
Paprika (1 tsp)
,
Dried Oregano (1 tsp)
,
Ground Black Pepper (1/8 tsp)
, and
Adobo Seasoning (1/2 Tbsp)
to the chicken.
Step 2
Add the
Low-Sodium Soy Sauce (1 Tbsp)
,
Garlic (4 cloves)
, juice from the
Limes (2)
and
Orange (1)
and mix everything together. Let marinade for 1 hour or longer.
Step 3
In a pan, heat cooking
Cooking Oil (3 Tbsp)
and add the chicken pieces without the marinade. Cook them on medium heat for 5 minutes on one side, and then another 5 minutes.
Step 4
Reduce the heat to medium low to let the water evaporate. Add the marinade to the pan and mix the chicken around in the sauce. If the chicken is not yet fully cooked through, add
Water (to taste)
to the side and braise it until it is fully cooked through.
Step 5
Add some
Tomato Paste (1/4 cup)
and
Water (to taste)
and mix until combined.
Step 6
Then add
Manzanilla Olives (6)
,
Cubanelle Pepper (1/2)
and
Onion (1/2)
, mix, and cook for 3 - 5 minutes on low heat.
