Cooking Instructions

Step 1
Preheat your oven to 350 degrees F (180 degrees C).
Step 2
In a mixing bowl, cream together Salted Butter (1/2 cup) and Caster Sugar (1/2 cup) until light and fluffy.
Step 3
Crack in Eggs (2) one at a time.
Step 4
Then, drizzle in Vanilla Extract (1 tsp) .
Step 5
Stir in All-Purpose Flour (3/4 cup) and Baking Powder (1 tsp) . Mix until just combined before adding your Milk (2 Tbsp) into the batter. Set aside.
Step 6
Line out your cupcake liners into the mini muffin pan. If you are not using a paper liner, you can just lightly grease the pan with Non-Stick Baking Spray (as needed) . You don't need to add too much coating or dust the pan with flour.
Step 7
Transfer your batter into the mini muffin pan.
Step 8
Bake it into the oven for about 12 to 15 minutes.
Step 9
Let it cool while you make your buttercream.
Step 10
To make your buttercream, beat Butter (2/3 cup) , Powdered Confectioners Sugar (1 cup) , and Vanilla Extract (1 tsp) for about 5 minutes until the mixture is pale and fluffy.
Step 11
As we are making 4 different flavors, separate the buttercream into 4 equal portions, roughly about 2 oz (60 grams) each.
Step 12
To make strawberry buttercream, stir in Strawberry Powder (1 Tbsp) . You can get these in the baking store.
Step 13
Use a piping bag to frost the mini cupcake, and finish off with Sprinkles (to taste) on top.
Step 14
To make chocolate buttercream, sift in some Unsweetened Cocoa Powder (1 Tbsp) and mix well.
Step 15
Use a piping bag to frost the mini cupcake, sprinkle some White Sprinkles (to taste) , a drizzle of Chocolate (to taste) , and decorate it with Chocolate Buttons (to taste) .
Step 16
To make the pandan buttercream, drizzle some Pandan Paste (to taste) and stir well.
Step 17
Use a piping bag to frost the mini cupcake, finish off with Desiccated Coconut (to taste) and drizzle over Coconut Jam (to taste) for the extra local flavor.
Step 18
For the vanilla buttercream, pipe it out and top it off with Fresh Strawberries (to taste) .
