Asian Chicken Salad with Apple Cider Vinaigrette

This Apple Cider Vinaigrette is not only delicious and fresh; it’s also super healthy! It takes just seconds to put together, and pairs wonderfully with the crispy, deep-fried rice vermicelli noodles on top. This salad will quickly become your go-to!

Apple Cider Vinegar

Granulated Sugar

2 tsp

Sesame Oil

Lemon , juiced

Cooking Oil

Rice Noodles

•

Romaine Hearts , chopped

•

1/2 tsp

Sesame Seeds

1 1/2 cups

Grilled Chicken , sliced

Carrot , julienned

•

1/2

Red Onion , thinly sliced

4 Tbsp

Fresh Cilantro , roughly chopped

3 Tbsp

Scallions , chopped

Cooking Instructions

Mix Apple Cider Vinegar (4 Tbsp) , Granulated Sugar (2 Tbsp) , Sesame Oil (2 tsp) and the juice from Lemon (1) . Set the vinaigrette aside.

Heat up Cooking Oil (as needed) in a wok or large pot. Test with wooden chopsticks or a wooden spoon to make sure the oil is hot enough.

Deep fry dry Rice Noodles (1 cup) . It should just take a few seconds for it to puff up. Retrieve with strainer. Set aside.

Toss Romaine Hearts (2) in vinaigrette. Add Sesame Seeds (1/2 tsp) .

Assemble the salad. Add Grilled Chicken (1 1/2 cups) , Carrot (1) , Red Onion (1/2) and Fresh Cilantro (4 Tbsp) .

Top with crispy noodles and Scallions (3 Tbsp) . Add these at the very last minute, right before serving.

Serve and enjoy!
