Step 1
Melt
Butter (1/4 cup)
, add
Granulated Sugar (2 Tbsp)
and cook until sugar starts to caramelize, add
Honey (2 Tbsp)

Step 2
Add
Fresh Blackberries (4 cups)
and
Pomegranate Seeds (2 cups)
, cook another minute or until the fruit has warmed through, set aside, keep warm.
Step 3
In a bowl mix together
All-Purpose Flour (1 cup)
,
Eggs (3)
,
Milk (1/2 cup)
,
Vanilla Extract (1/2 tsp)
,
Granulated Sugar (1 Tbsp)
and mix well until there are no lumps.
Step 4
In a medium-hot, lightly buttered pan, spread the batter thin and evenly, cook until lightly browned, flip to other side.
Step 5
Cook this side until lightly browned.
Step 6
Remove crepe to a warm platter, fold crepe in half, and repeat with the rest of the batter.
Step 7
Top the crepes with the caramelized berries.
Step 8
Sprinkle with
Caster Sugar (to taste)
. Serve and enjoy!
