Vanilla Crepes with Caramelized Blackberries and Pomegranate Seeds

Here is a version of crepes with caramelized fruits. Use blackberries, pomegranate, or any fruit you desire! It will be just as wonderful – yummy to taste and pretty to look at.

4 tablespoon Butter
3 tablespoon Granulated Sugar
2 tablespoon Honey
2 pint Blackberries
1/2 cup Milk
1/2 teaspoon Vanilla Extract

STEP 1
Melt Butter (4 tablespoon), add Granulated Sugar (2 tablespoon) and cook until sugar starts to caramelize, add Honey (2 tablespoon).
STEP 2
Add Blackberries (2 pint) and Pomegranate Seeds (1 pint), cook another minute or until the fruit has warmed through, set aside, keep warm.
STEP 3
In a bowl mix together All-Purpose Flour (1 cup), Egg (3), Milk (1/2 cup), Vanilla Extract (1/2 teaspoon), Granulated Sugar (1 tablespoon) and mix well until there are no lumps.
STEP 4
In a medium-hot, lightly buttered pan, spread the batter thin and evenly, cook until lightly browned, flip to other side.
STEP 5
Cook this side until lightly browned.
STEP 6
Remove crepe to a warm platter, fold crepe in half, and repeat with the rest of the batter.
STEP 7
Top the crepes with the caramelized berries.
STEP 8
Sprinkle with Caster Sugar (to taste). Serve and enjoy!
