Sauté Olive Oil (1 tablespoon), Onion (1 1/2 cup), Garlic (2 clove), Red Bell Pepper (1), and Celery (2 stalk) for 5 minutes on sauté setting, until softened and fragrant.
Add Fresh Thyme (1 tablespoon), Fresh Oregano (1/2 tablespoon), Cajun Seasoning (1/2 teaspoon), and Cayenne Pepper (1/2 teaspoon) and mix again for 1 minute.
Add Lentils (1 cup), Vegetable Broth (3 cup), Okra (2 cup), Diced Tomatoes (1 can), Apple Cider Vinegar (2 tablespoon), Tomato Sauce (1/2 cup), and Cauliflower (1 cup). Mix together.
Place lid on pressure cooker and cook on high for 12 minutes.
After cooking, add Sea Salt and Pepper (to taste).
Once ready to serve into bowls, garnish with Crushed Red Pepper Flakes (to taste), Jalapeño Pepper (to taste), and Fresh Cilantro (to taste).
