Cauliflower Fried Rice

Cauliflower , chopped

or Frozen Cauliflower

1 Tbsp

Sesame Oil

•

4 Tbsp

Frozen Green Peas

1 Tbsp

Thinly Sliced Carrots

1 bunch

Scallions , sliced

2 cloves

Garlic , minced

Salt

Ground Black Pepper

Egg

3 Tbsp

Soy Sauce

or Tamari

Cooking Instructions

Push Cauliflower (1 head) through a food processor using the grating attachment. If you do not have the grating attachment, you can use the regular blade, but it will be cut differently.

Heat Sesame Oil (1 Tbsp) in a wok or large nonstick skillet over high heat. Add cauliflower. Cook for one minute.

Add Scallions (1 bunch) , Frozen Green Peas (4 Tbsp) , and Carrots (1 Tbsp) then stir fry until cauliflower is just beginning to turn tender, 2-3 minutes.

Add Garlic (2 cloves) and continue to stir fry for about 30 more seconds.

Create a well in the center of the cauliflower rice and add 1 tsp sesame oil. Crack an Egg (1) in the center and scramble. Once cooked, mix the egg in with the cauliflower rice. Add Salt (to taste) , Ground Black Pepper (to taste) , and Soy Sauce (3 Tbsp) .

Serve hot.
