Trim off fat from Beef Chuck (3 pound). Chop.
Add chuck roast, Ground Bison (1 pound), Bacon (8 ounce), Onion (2), Garlic (1 tablespoon), Bay Leaf (2), Chili Powder (3 tablespoon), Smoked Paprika (1 tablespoon), Celery Salt (1 teaspoon), and Ground Cumin (1 tablespoon) to slow cooker.
Add Red Bell Pepper (3), Jalapeño Pepper (1), Diced Tomatoes (1 can), Tomato Paste (1 can), Beef Broth (1 can), Salt and Pepper (to taste), and Cayenne Pepper (1 dash) to the slow cooker.
Serve in bowls, garnished with Fresh Cilantro (to taste), more onion, and Avocado (to taste).
