Cooking Instructions

Step 1
To a big mixing bowl, add Self-Rising Flour (2 cups) , All-Purpose Flour (1/2 cup) , Caster Sugar (3/4 cup) . Mix together with a wooden spoon.
Step 2
For the wet ingredients, in a large jug, lightly beat Eggs (2) and add Vegetable Oil (1/2 cup) , Buttermilk (1 cup) and Vanilla Extract (1 tsp) . Mix together until combined.
Step 3
Make a hole in the center of the dry ingredients and pour the wet ingredients in, then mix with a wooden spoon.
Step 4
Grease and line a 3-centimeter deep oven tray with non-stick baking paper. Then, carefully spread half of the mixture along the bottom of the tray. Set aside.
Step 5
In a microwave-safe dish, add Cold Water (1/2 Tbsp) to Strawberry Jam (1/4 cup) and microwave for 10-20 seconds or until warm.
Step 6
Drizzle the melted jam over the dough in the tray, then dollop the rest of the dough on top to cover the jam. Spread normal jam over the top of the second layer of dough in the shape of a row. Cook at 200 degrees C (400 degrees F) for 30 - 35 minutes.
Step 7
Brush the non-jammed surface of the pudding with melted butter and sprinkle the entirety with Cinnamon Sugar (1 Tbsp) . Let cool at least 10 minutes before serving.
Step 8
Serve with Whipped Cream (to taste) and enjoy!
