Preheat oven to 400 degrees F (200 degrees C). Coat a 12-cup muffin pan with cooking spray.

In a large bowl, whisk together All-Purpose Flour (1 1/4 cups), Dark Brown Sugar (1/2 cup), Baking Soda (1/2 tsp), Baking Powder (1/2 tsp), Ground Nutmeg (1/2 tsp) and Coarse Salt (1/2 tsp) until there are no lumps.

Stir in Old Fashioned Rolled Oats (1 cup) and Raisins (1/2 cup). Add Extra-Virgin Olive Oil (3 Tbsp), Farmhouse Eggs® Large Brown Egg (1), Non-Fat Milk (1/3 cup), Carrots (4) and Banana (1) and stir until blended.
