Use a spiralizer to spiralize the Carrot (3) and the Zucchini (3) into separate bowls.
Scoop out the Avocado (2) into a mixer. Add Olive Oil (1/4 cup), Lemon (1), Ground Cumin (1 teaspoon), Ground Turmeric (1/4 teaspoon), Salt and Pepper (to taste). Use the mixer to create the sauce.
Pour some oil into a frying pan and add Ground Cumin (1/4 teaspoon). Put in the spiralized carrots and cook them while stirring until they start to soften.
Add in the spiralized zucchini. Toss the mix lightly until everything is combined and the noodles are nice and tender. Then put the mix into a colander to drain for a few minutes.
Add in the sauce, and mix it together with the vegetables. Season with Ground Coriander (1 tablespoon).
