Step 1
Use a spiralizer to spiralize the
Carrots (3)
and the
Zucchini (3)
into separate bowls.
Step 2
Scoop out the
Avocados (2)
into a mixer. Add
Olive Oil (1/4 cup)
, Freshly Squeezed
Lemon (1)
,
Ground Cumin (1 tsp)
,
Ground Turmeric (1/4 tsp)
,
Salt (to taste)
, and
Ground Black Pepper (to taste)
. Use the mixer to create the sauce.
Step 3
Pour some oil into a frying pan and add
Ground Cumin (1/4 tsp)
. Put in the spiralized carrots and cook them while stirring until they start to soften.
Step 4
Add in the spiralized zucchini. Toss the mix lightly until everything is combined and the noodles are nice and tender. Then put the mix into a colander to drain for a few minutes.
Step 5
Add in the sauce, and mix it together with the vegetables. Season with
Ground Coriander (1 Tbsp)
