In chopper or food processor, finely chop the Zucchini (1 cup).

In a large bowl stir together the dry ingredients: Whole Wheat Flour (2 cups), Baking Soda (1 tsp) and Salt (1/2 tsp).

In a separate bowl prepare the wet ingredients. Mash the Bananas (2) and stir in Unsweetened Apple Sauce (3/4 cup), zucchini, Pure Maple Syrup (1/4 cup), Vegetable Oil (1/4 cup), and Vanilla Extract (1 tsp).
