Preheat oven to 350 degrees F (180 degrees C) and place muffin liners in muffin pan.
In a small bowl combine Flaxseed Meal (2 tablespoon) and Water (6 tablespoon) and let sit for approximately 5 minutes until gel-like to make the flax egg.
In chopper or food processor, finely chop the Zucchini (1 cup).
In a large bowl stir together the dry ingredients: Whole Wheat Flour (2 cup), Baking Soda (1 teaspoon) and Salt (1/2 teaspoon).
In a separate bowl prepare the wet ingredients. Mash the Banana (2) and stir in Unsweetened Apple Sauce (3/4 cup), zucchini, Pure Maple Syrup (1/4 cup), Vegetable Oil (1/4 cup), and Vanilla Extract (1 teaspoon).
Pour the wet ingredients into the dry ingredients and stir until combined. Then, stir in the Cacao Baking Chips (1 cup).
Use an ice cream scoop to place the batter into the muffin liners.
Bake for approximately 15-20 minutes. Muffins are done when you place a toothpick in them and it comes out clean.
Allow muffins to cool and enjoy!
