Cooking Instructions

Preheat oven to 350 degrees F (180 degrees C) and place muffin liners in muffin pan.

In a small bowl combine Flaxseed Meal (2 Tbsp) and Water (1/3 cup) and let sit for approximately 5 minutes until gel-like to make the flax egg.

In chopper or food processor, finely chop the Zucchini (1 cup) .

In a large bowl stir together the dry ingredients: Whole Wheat Flour (2 cups) , Baking Soda (1 tsp) and Salt (1/2 tsp) .

In a separate bowl prepare the wet ingredients. Mash the Bananas (2) and stir in Unsweetened Apple Sauce (3/4 cup) , zucchini, Pure Maple Syrup (4 Tbsp) , Vegetable Oil (4 Tbsp) , and Vanilla Extract (1 tsp) .

Pour the wet ingredients into the dry ingredients and stir until combined. Then, stir in the Cacao Baking Chips (1 cup) .

Use an ice cream scoop to place the batter into the muffin liners.

Bake for approximately 15-20 minutes. Muffins are done when you place a toothpick in them and it comes out clean.

Allow muffins to cool and enjoy!
