Step 1
Preheat your oven to 350 degrees F (180 degrees C).
Step 2
Into a food processor, add the Butter (1/2 cup) and Caster Sugar (1/2 cup) . Process until it is nice and creamy.
Step 3
Proceed to add in the Vanilla Extract (1 tsp) , Egg (1) , All-Purpose Flour (1/2 cup) , Corn Flour (3/4 cup) , Baking Powder (1 tsp) , and Milk (2 Tbsp) . Process until it becomes a big ball of dough.
Step 4
Wrap the dough in plastic wrap, and pop it in the fridge for about 30 minutes.
Step 5
Cut the dough into half, and put the first half into a baking tin lined with baking paper. Using the fingers, press it all over the base of the tin. Then add the Canned Fruit Cocktail (2 1/3 cups) and roll the remaining pastry on top. Sprinkle over with some caster sugar, and put it in the fridge for another half an hour.
Step 6
Before baking, slice the shortbread into pieces. Then, bake inside a preheated oven under 350 degrees F (180 degrees C) for about 30 minutes.
Step 7
Serve and enjoy!
