Into a food processor, add the
Butter (1/2 cup)
Caster Sugar (1/2 cup)
. Process until it is nice and creamy. Then add in the
Vanilla Extract (1 tsp)
All-Purpose Flour (1/2 cup)
Corn Flour (3/4 cup)
Baking Powder (1 tsp)
Milk (2 Tbsp)
. Process that all again until it becomes a big ball of dough.
Wrap the dough in a plastic wrap, and pop it in the fridge for about 30 minutes.
Cut the dough into half, and put the first half into a baking tin lined with baking paper. Using the fingers, press it all over the base of the tin. Then add the
Fruit Cocktail (2 1/3 cups)
and roll the remaining pastry on top. Sprinkle over with some
Caster Sugar (to taste)
, and put it in the fridge for another half an hour.
Before baking, slice the shortbread into pieces. Then, bake inside a preheated oven under 180 degrees C (350 degrees F) for about 30 minutes.
