Canned Black Beans , rinsed, drained
2 1/2 cups
Corn Kernels

Avocado , chopped, pitted

Lime , juiced
1/4 cup
1/4 tsp
Ground Cumin
1/2 tsp
Chili Powder
1
Plum Tomato , roughly chopped
2
Scallions , finely chopped
2 Tbsp
Extra-Virgin Olive Oil
to taste
Salt and Pepper

Red Bell Pepper , finely chopped

Step 1
In a mixing bowl, add Canned Black Beans (1 3/4 cups) , Corn Kernels (2 1/2 cups) , Plum Tomato (1) , Avocado (1) , Fresh Cilantro (1/4 cup) , Scallions (2) , Red Bell Pepper (1) , Ground Cumin (1/4 tsp) , Chili Powder (1/2 tsp) , Extra-Virgin Olive Oil (2 Tbsp) , and Salt and Pepper (to taste) . Squeeze Lime (1) over top. Mix together.
