Step 1
Remove the kernels from the Yellow Corn (1 ear) .
Step 2
Heat Extra-Virgin Olive Oil (1 Tbsp) in a medium saucepan over medium heat. When hot, add the Red Onion (1) and a pinch of Kosher Salt (to taste) and Ground White Pepper (to taste) . Cook for about 10 minutes, stirring regularly.
Step 3
Season both sides of the Boneless, Skinless Chicken Breast (1) with Smoked Paprika (1/4 tsp) and a pinch of Kosher Salt (to taste) .
Step 4
Heat a lightly oiled grill, grill pan, or regular pan over medium-high heat. When hot, add the chicken breast. Cook for 3-4 minutes on each side until opaque and cooked through.
Step 5
Remove the chicken from the grill and let it cool slightly before slicing it into 1/2-inch cubes.
Step 6
Now it’s time to assemble your quesadillas. Sprinkle Pepper Jack Cheese (1 cup) on one side of each Large Whole Grain Tortillas (2)

Top with half the caramelized onions, corn, cubed chicken, Canned Black Beans (1/2 cup) , and Scallions (2) in an even layer. Sprinkle with more Pepper Jack Cheese (1 cup)

Heat a large skillet or pan over medium heat. Fold the tortilla over the toppings. When hot, carefully add the quesadillas to the pan. Cook for 2-3 minutes on each side until the quesadillas are lightly browned and the cheese has melted.
Step 9
Carefully transfer the quesadillas to a cutting board. Let them cool for a couple of minutes and then slice each one into quarters. Serve with Guacamole (to taste) and Salsa (to taste) if you’re into that. You should be.
