Step 1
Preheat your waffle maker.
Step 2
For the waffles, mix the
All-Purpose Flour (1 3/4 cups)

Brown Sugar (1/4 cup)

Baking Powder (1/2 Tbsp)
, and
Salt (1/2 tsp)
together in a medium bowl.
Step 3
In a separate bowl, whisk together the
Whole Milk (1 cup)
,
Buttermilk (1/2 cup)
, Yolks of the
Eggs (2)
,
Butter (1/2 cup)
, and
Vanilla Extract (1 tsp)
and add to the dry mixture. Stir to combine.
Step 4
Whisk the Egg Whites until foamy and add the
Cream of Tartar (1/8 tsp)
. Whisk until the egg whites form soft peaks.
Step 5
Gently fold the egg whites into the batter.
Step 6
Spray the preheated waffle maker with non-stick spray, and pour batter in. Set to highest heat. Flip over after a few minutes. Waffles are done when they are golden. Immediately place on a cooling rack to keep crispy.
Step 7
For the chai-spiced maple syrup, place the
Maple Syrup (1 cup)
,
Water (1/4 cup)
,
Butter (2 Tbsp)
,
Ground Ginger (1/2 tsp)
,
Ground Cloves (1/4 tsp)
,
Ground Allspice (1/4 tsp)
,
Ground Nutmeg (1/4 tsp)
,
Ground Cardamom (1/4 tsp)
, and
Ground Cinnamon (1 pinch)
in a saucepan over medium/high heat.
Step 8
Bring to a rolling boil and then set the timer for 4 minutes. Remove from heat and cool until warm.
Step 9
Serve the waffles with the maple syrup and some whipped cream if desired!
