In a separate bowl, whisk together the Whole Milk (1 cup), Buttermilk (1/2 cup), Yolks of the Eggs (2), Butter (1/2 cup), and Vanilla Extract (1 tsp) and add to the dry mixture. Stir to combine.

Whisk the Egg Whites until foamy and add the Cream of Tartar (1/8 tsp). Whisk until the egg whites form soft peaks.

Spray the preheated waffle maker with non-stick spray, and pour batter in. Set to highest heat. Flip over after a few minutes. Waffles are done when they are golden. Immediately place on a cooling rack to keep crispy.

For the chai-spiced maple syrup, place the Maple Syrup (1 cup), Water (1/4 cup), Butter (2 Tbsp), Ground Ginger (1/2 tsp), Ground Cloves (1/4 tsp), Ground Allspice (1/4 tsp), Ground Nutmeg (1/4 tsp), Ground Cardamom (1/4 tsp), and Ground Cinnamon (1 pinch) in a saucepan over medium/high heat.
