In a separate bowl, whisk together the Whole Milk (1 cup), Buttermilk (1/2 cup), Yolks of the Eggs (2), Butter (1/2 cup), and Vanilla Extract (1 tsp) and add to the dry mixture. Stir to combine.

Whisk the Egg Whites until foamy and add the Cream of Tartar (as needed). Whisk until the egg whites form soft peaks.

Spray the preheated waffle maker with non-stick spray, and pour batter in. Set to highest heat. Flip over after a few minutes. Waffles are done when they are golden. Immediately place on a cooling rack to keep crispy.

For the chai-spiced maple syrup, place the Maple Syrup (1 cup), Water (4 Tbsp), Butter (2 Tbsp), Ground Ginger (as needed), Ground Cloves (as needed), Ground Allspice (as needed), Ground Nutmeg (as needed), Ground Cardamom (as needed), and Ground Cinnamon (1 pinch) in a saucepan over medium/high heat.
