To a large non-stick skillet or wok, add the Butter (2 tablespoon) allow to melt. Add Shrimp (1 pound) season with Salt and Pepper (to taste), and cook over medium-high heat for about three minutes. Remove shrimps and set aside.
Add Cooking Oil (2 tablespoon) and allow it to get hot. Add Onion (1), Mixed Vegetables (1 cup) and cook for about 2 minutes, or until vegetables begin to soften, stir occasionally. Add the Garlic (3 clove), Ground Ginger (1/4 teaspoon) and cook for one more minute, stirring occasionally.
Push vegetables to one side of the skillet, add the Egg (2) to the other side, and cook to scramble.
Add the White Rice (3 cup), shrimps, and Soy Sauce (3 tablespoon), and stir to combine. Cook until the rice and shrimps are reheated. Garnish with Scallion (to taste) and serve.
