For the Dressing: Add Apple (1/2), the juice from Lemon (1), Water (2 Tbsp), Extra-Virgin Olive Oil (2 Tbsp), Balsamic Vinegar (1 Tbsp), Maple Syrup (2 Tbsp) and Poppy Seeds (1 tsp) to food processor or blender and blend for 15-20 seconds or until smooth consistency is reached.

For the Salad: Divide Fresh Spinach (4 cups), Carrot (1), Apple (1), Canned Chickpeas (1/4 cup), Goat Cheese (4 Tbsp) and Pepitas (2 Tbsp) into two large plates or bowls, drizzle with dressing, serve and enjoy.
