Extra-Virgin Olive Oil
1 Tbsp
Balsamic Vinegar
1 tsp
Poppy Seeds
4 cups
Spring Mix

Large Carrot , chopped, shaved

Medium Apple , thinly sliced
1/4 cup
Canned Chickpeas , rinsed, drained, cooked
2 oz
Goat Cheese
2 Tbsp
Pumpkin Seeds

Step 1
For the Dressing: Add Apple (1/2) , Lemon Juice (2 Tbsp) , Water (2 Tbsp) , Extra-Virgin Olive Oil (2 Tbsp) , Balsamic Vinegar (1 Tbsp) , Maple Syrup (2 Tbsp) and Poppy Seeds (1 tsp) to food processor or blender and blend for 15-20 seconds or until smooth consistency is reached.
Step 2
For the Salad: Divide Fresh Spinach (4 cups) , Carrot (1) , Apple (1) , Canned Chickpeas (1/4 cup) , Goat Cheese (2 oz) and Pumpkin Seeds (2 Tbsp) into two large plates or bowls, drizzle with dressing, serve and enjoy.
