Step 1
For the Dressing: Add Apple (1/2), Lemon Juice (2 tablespoon), Water (2 tablespoon), Extra-Virgin Olive Oil (2 tablespoon), Balsamic Vinegar (1 tablespoon), Maple Syrup (2 tablespoon) and Poppy Seeds (1 teaspoon) to food processor or blender and blend for 15-20 seconds or until smooth consistency is reached.
Step 2
For the Salad: Divide Fresh Spinach (4 cup), Carrot (1), Apple (1), Canned Chickpeas (1/4 cup), Goat Cheese (2 ounce) and Pumpkin Seeds (2 tablespoon) into two large plates or bowls, drizzle with dressing, serve and enjoy.
