This Gluten-Free Three Cheese Sun-dried Tomato Pizza with Pesto is a healthy remake of my favorite Mellow Mushroom Pizza, the Kosmic Karma, it's loaded with veggies and full of flavor!

Fresh Spinach , loosely packed
1 cup
Fresh Mozzarella , thinly sliced

Roma Tomato , thinly sliced

Feta Cheese
1 2/3 cups
Tomato Sauce
2/3 cup
Tomato Paste
2 cloves
Garlic , minced
1 tsp
Italian Seasoning
1 tsp
1/4 cup
Pecans
1/2 cup
Parmesan Cheese , freshly grated
1/2 Tbsp
Lemons , juiced, freshly squeezed
1 Tbsp
Coconut Oil , melted
1/2
Small Avocado

Directions

Step 1
Preheat oven to 410 degrees F (210 degrees C).
Step 2
While oven heats, add all Tomato Sauce (1 2/3 cups) , Tomato Paste (2/3 cup) , Garlic (1 clove) , Fresh Parsley (1 Tbsp) , Italian Seasoning (1 tsp) , Smoked Paprika (1 tsp) , Coconut Sugar (1 tsp) , Salt (1/2 tsp) and Ground Black Pepper (1/4 tsp) to medium bowl, stir together, taste and tweak seasonings according to your preferences.
Step 3
Then add Fresh Basil Leaves (1 cup) , Fresh Spinach (1 cup) , Pecans (1/4 cup) , Parmesan Cheese (1/2 cup) , Garlic (1 clove) , Lemons (1/2 Tbsp) , Salt (1/2 tsp) , Ground Black Pepper (1/4 tsp) , Coconut Oil (1 Tbsp) , Avocado (1/2) and Water (3 Tbsp) to bowl of food processor, process 10-20 seconds or until smooth consistency is reached.
Step 4
To assemble pizzas, add homemade pizza sauce to both Gluten-Free Pizza Crusts (2) , followed by single layer of Fresh Spinach (1/2 cup) and Sun-Dried Tomatoes (1/4 cup) , then top with Fresh Mozzarella (1 cup) and finally layer Roma Tomato (1) .
Step 5
Bake for 10 minutes.
Step 6
Remove from oven, drizzle with pesto, sprinkle with Feta Cheese (1/3 cup) and bake additional 2 minutes. Serve and enjoy!
