Preheat oven to 350 degrees F (180 degrees C). Line your loaf pan (8x4-inch standard loaf pan or 9x4-inch Pullman pan) with a sheet of parchment. Set aside.
All-Purpose Flour (1 cup)
Whole Wheat Flour (1/2 cup)
Ground Cinnamon (1/2 Tbsp)
Ground Cardamom (1/2 tsp)
Ground Allspice (1/4 tsp)
Baking Powder (1/2 Tbsp)
Baking Soda (1/2 tsp)
Salt (1/2 tsp)
in a medium bowl.
Brown Sugar (1/2 cup)
Granulated Sugar (1/2 cup)
Vanilla Extract (1 tsp)
Extra-Virgin Olive Oil (2/3 cup)
Water (1/3 cup)

With a spatula, stir flour mixture into the wet mixture. Fold in the grated
