Step 1
Preheat oven to 350 degrees F (180 degrees C). Line your loaf pan (8x4-inch standard loaf pan or 9x4-inch Pullman pan) with a sheet of parchment. Set aside.
Step 2
Whisk
All-Purpose Flour (1 cup)
and
Whole Wheat Flour (1/2 cup)
with
Ground Cinnamon (1/2 Tbsp)
,
Ground Cardamom (1/2 tsp)
,
Ground Allspice (1/4 tsp)
,
Baking Powder (1/2 Tbsp)
,
Baking Soda (1/2 tsp)
, and
Salt (1/2 tsp)
in a medium bowl.
Step 3
Whisk
Egg (1)
with
Brown Sugar (1/2 cup)
,
Granulated Sugar (1/2 cup)
,
Vanilla Extract (1 tsp)
,
Extra-Virgin Olive Oil (2/3 cup)
, and
Water (1/3 cup)
in a large bowl. The mixture will emulsify and look homogenous.
Step 4
With a spatula, stir flour mixture into the wet mixture. Fold in the grated
Apples (2)
and then fold in chopped apples. Scrape batter into the prepared pan and smooth the top.
Step 5
Arrange overlapping
Apple (1)
on the top of the bread. Brush apple slices with a bit of
Olive Oil (1 Tbsp)
and then sprinkle the top with
Granulated Sugar (1 Tbsp)
.
Step 6
Bake in the center of the oven until a tester inserted into the cake comes out clean, about 70 minutes.
Step 7
Transfer to a rack to cool. Let cool completely, about 1 hour.
