1/2 cup Quinoa
1 cup Water
2 tablespoon Oil
1/2 teaspoon Ground Cumin
1/2 teaspoon Smoked Paprika
1 can (15 ounce) drained Red Kidney Beans
1 can (15 ounce) drained Corn
1 cup shredded Monterey Jack Cheese
to taste Salt and Pepper
to taste Avocado
to taste Sour Cream

STEP 1
Bring Water (1 cup) to boil in a small saucepan then add Quinoa (1/2 cup). Cover and cook for 10 minutes, or until water is absorbed.
STEP 2
Meanwhile,​ add Oil (1 tablespoon) to a large saucepan over medium heat. Add Yellow Onion (1), Garlic (2 clove), Ground Cumin (1/2 teaspoon), Smoked Paprika (1/2 teaspoon) Salt and Pepper (to taste) cooking until onions begin to soften.
