Step 1
Preheat oven to 450 degrees F (230 degrees C).

Pour melted lemon-butter all over chicken, use your fingers to spread the butter evenly.

liberally all over the chicken. Place chicken breast-side down on cast iron skillet.

Slice the other

into thin slices. Place lemon slices around the chicken, then place
Carrots (4)

Garlic (10 cloves)
and
Fresh Thyme (6 sprigs)
all around the chicken.
Step 8
Lower the oven temperature to 400 degrees F (200 degrees C), then place skillet in the oven. Leave the chicken untouched for at least 50 minutes. Roast until internal temperature on the thickest part of chicken thigh reaches 165 degrees F (73 degrees C).
Step 9
Let the chicken rest for about 15 minutes before carving. Serve and Enjoy!
