Makes 2-3 servings.

You can add 1/4 cup of basil to the sauce to make a pesto-inspired sauce!

Freeze any leftover sauce in a Tupperware container for up to 3 months.

Add Avocado (1), Garlic (2 cloves), Olive Oil (4 Tbsp), 1 tsp of Lemon (1), Grated Parmesan Cheese (4 Tbsp), Salt (to taste), and Ground Black Pepper (to taste), and Crushed Red Pepper Flakes (1/4 tsp) to a blender and blend until smooth. Taste and adjust seasoning accordingly.

Bring a pot of salted water to a boil. Add Pasta (8 oz) and cook according to directions. Be sure to reserve a cup of pasta water before draining the pasta.

Add drained pasta into a saucepan over low heat. Add sauce and stir until the pasta is well coated. Add a couple of tablespoons of pasta water to loosen the sauce is needed.

Add Cherry Tomato (1/2 cup) and stir for 1-2 minutes and then serve. Enjoy while warm or cold!
