Here is my recipe for Pineapple Zucchini Bread with White Chocolate Chips and Macadamia Nuts….wow, that’s a long name. This bread is super moist and delicious with the heavenly aroma of baked pineapple.

1 cup Brown Sugar
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 teaspoon Ground Cinnamon
1/2 teaspoon Salt
1/2 cup chopped Macadamia Nuts
1 cup White Chocolate Chips

STEP 1
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one loaf pan.
STEP 2
In a large mixing bowl, mix all wet ingredients: Butter (1/2 cup), Brown Sugar (1 cup), Egg (2), Canned Crushed Pineapple (8 ounce), Vanilla Extract (1 teaspoon), and Zucchini (1 cup).
STEP 3
In a medium bowl, sift All-Purpose Flour (2 cup) with Baking Soda (1 teaspoon), Baking Powder (1 teaspoon), Ground Cinnamon (1 teaspoon), and Salt (1/2 teaspoon). Slowly add dry ingredients to wet ingredients. Stir till combined...don't over-mix!
STEP 4
Fold in White Chocolate Chips (1 cup) and Macadamia Nuts (1/2 cup). Pour the batter into the loaf pan.
STEP 5
Bake for one hour.
STEP 6
Let it cool before serving.
