Cooking Instructions
1.
Make the Spiced Apple Filling. In a sauce pan over medium heat, cook the
Unsalted Butter (1 Tbsp)

Dark Brown Sugar (3 Tbsp)

Granny Smith Apples (3)
,
Ground Ginger (1/8 tsp)
,
Ground Cloves (1/8 tsp)
,
Ground Nutmeg (1/8 tsp)
,
Simply Organic Cinnamon, Ground (1/4 tsp)
, and
Lemon Juice (1/2)
, stirring frequently, for about 20 minutes. Drain off any liquid. Set aside.

Meanwhile, prepare the Maple Whipped Cream. In the bowl of an electric mixer fitted with the whisk attachment, beat together the
Heavy Cream (1 cup)
,
Pure Maple Syrup (4 Tbsp)
, and
Salt (1/4 tsp)
until soft peaks form. Cover and refrigerate until ready to use.

To make the Pancake Batter, whisk together the
All-Purpose Flour (1 3/4 cups)
,
Baking Soda (1/2 tsp)
,
Baking Powder (1 tsp)
,
Granulated Sugar (1 1/2 Tbsp)
, and
Salt (1/2 tsp)
in a large bowl.

In another container, lightly whisk the
Egg Yolks (3)
, then whisk in the
Buttermilk (1 1/3 cups)
and
Sour Cream (1/2 cup)
.

Add the egg yolk mixture to the flour mixture and mix until well combined; the batter will be lumpy. Set aside.

In the bowl of an electric mixer fitted with the whisk attachment, beat the
Egg Whites (5)
on high speed until stiff but not dry peaks form, 2 to 3 minutes. Using a rubber spatula, gently stir the whites into the batter in two additions.
7.
Make the Ebelskiver. Brush the wells of a filled-pancake pan with some
Unsalted Butter (3 Tbsp)
. Heat over low-medium heat until the butter bubbles. Pour 1 Tbsp of the batter into each well and cook for 2 minutes.
8.
Spoon a mounded 1/2 tsp of the apple filling into the center of each pancake and top with 1 more tablespoon of the batter. Cook until the bottoms are golden brown and crispy, about 2 minutes more.
9.
Using 2 skewers or toothpicks, carefully turn and flip the pancakes over. Cook until golden and crispy, about 3 minutes more.
10.
Transfer the pancakes to a plate. Repeat with the remaining batter and filling.
11.
In a small bowl, combine
Powdered Confectioners Sugar (1 Tbsp)
and
Simply Organic Cinnamon, Ground (1/4 tsp)
and sprinkle lightly over the pancakes.
12.
Be sure to let the filled pancakes cool slightly before eating. Serve with maple whipped cream. Enjoy!
