Step 1
Boil
Winter Melon Gourd (1 cup)
,
Bananas (1 cup)
, and
Yams (1 cup)
together with
Ground Turmeric (1/4 tsp)
,
Red Chili Powder (1/2 tsp)
, and
Salt (to taste)
. Once this cooks well add the
Chana Dal (1 cup)
.
Step 2
Grind together
Desiccated Coconut (1 cup)
and
Green Chili Pepper (2)
. Add the coconut mix to the chana dal vegetable mix. Blend well and allow to boil.
Step 3
Once boiled add
Curry Leaves (to taste)
and mix well.
Step 4
Pour
Coconut Oil (2 Tbsp)
into a pan, add
Mustard Seeds (1/4 tsp)
, and once this pops, add
Dried Chili Peppers (2)
and
Desiccated Coconut (1/2 cup)
. Roast till the coconut becomes light brown in color.
Step 5
Turn off the heat and add
Ground Black Pepper (1/2 tsp)
, mix it well. Add this to the koottucurry and serve it hot with rice.
