However slow or fast 2020 has slugged by for you, we have somehow found ourselves back at square one- a new year ahead of us full of promise and opportunity. And as we know, new beginnings start at breakfast. In case you haven’t heard, breakfast is the most important meal of the day. By eating breakfast first thing in the morning you’re kickstarting your metabolism, getting much-needed nutrients, and refocusing your brain for the day.
For the base of my healthy yet satisfying breakfast dish, I looked to an unlikely friend, cauliflower. With its move from the corners of the produce bin to center stage, cauliflower can now be found everywhere. From cauliflower steak and battered buffalo wings to pizza, gnocchi, and rice, versatility is its greatest strength.
As you can imagine, turning cauliflower into warm, comforting oatmeal was a little tricky. Staring at a head of cauliflower, the easy part was breaking it down into the now-familiar cauliflower rice, but truly transforming it into something cozy and delicious took a little more brainpower. To attain true oatmeal likeness, I knew it needed to be smooth and creamy, so I soaked the cauli-rice in a mix of two non-dairy milks. I picked coconut milk for sweetness, healthy fats and electrolytes, and oat milk for B12 and of course, oat flavor. To build more flavor, I created a spice mix of deep and sunny cinnamon, nutmeg, cloves, and brown sugar. When the spice mix melts into the pot along with the peanut butter and vanilla, our oatmeal starts to take form. With a swirl of jelly to finish it off, our bowl is now the ultimate bite and the perfect way to start the day. This breakfast is low-carb, and allergy-friendly so literally, everyone can have a piece of what’s cooking.
I’m finally overcoming my aversion to breakfast, first comes coffee... next comes cauliflower!
