Step 1
In a small bowl, combine Honey (1 tsp) , Neutral Oil (1 Tbsp) , Soy Sauce (1 Tbsp) , and Lemon (1/2) .
Step 2
Poke holes in both sides of the Flank Steak (1 lb) with a fork. Brush with marinade. Cover and marinate the steak for 30 minutes. Don’t discard the marinade.
Step 3
Pat the steak dry. Heat a cast-iron skillet over medium-high heat with Neutral Oil (1 Tbsp) , and sear steak for 3-4 minutes a side, or until 130 degrees F (55 degrees C) in the middle for medium-rare.
Step 4
Transfer steak to a tray and cover with foil. Let it rest for 5-10 minutes.
Step 5
To the same pan over medium-high heat, add Butter (2 Tbsp) . Once hot, add Button Mushrooms (8 oz) . Cook until mushrooms are softened and begin to brown, 2-3 minutes, then season with Freshly Ground Black Pepper (1/4 tsp) .
Step 6
Turn the heat to medium and add the All-Purpose Flour (1/2 Tbsp) , stir until it coats the mushrooms.
Step 7
Add the remaining marinade, Beef Broth (1/2 cup) , Balsamic Vinegar (1/2 Tbsp) , Lemon (1/2) , and Garlic (1 clove) , and cook for 2-3 more minutes, until thickened.
Step 8
Cut steak against the grain, then pour the sauce over the top, optionally garnish with Fresh Thyme (4 sprigs) , and serve.
