Preheat oven to 400 degrees F (205 degrees C).
Thaw Vegan Puff Pastry (1 sheet) for 10-15 minutes, until it unfolds easily.
Bake as is or roll out pastry sheet with a rolling pin for a bigger pizza. Bake in preheated oven for 10-15 minutes, until golden. Remove from baking sheet to cool.
Juice the Lemon (1/2). You will need 1 teaspoon of juice.
Mash Avocado (2), Greek Seasoning (1/4 teaspoon), and 1 teaspoon lemon juice. Set aside.
Shred the Lettuce (1/2 package).
Halve the Grape Tomatoes (14).
Mix Vegan Mayo (5 tablespoon), Sriracha (1 teaspoon), and Water (1 tablespoon) and set aside. The water thins it out for drizzling.
When crust is mostly cool, spread avocado mixture evenly to edges. Top with shredded lettuce, tomato halves, and Black Olives (12).
Just before serving, drizzle with sriracha mayo, saving extra for dipping. Store leftovers in fridge. Enjoy!
