Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Thaw Vegan Puff Pastry (1 sheet) for 10-15 minutes, until it unfolds easily.
Step 3
Bake as is or roll out pastry sheet with a rolling pin for a bigger pizza. Bake in preheated oven for 10-15 minutes, until golden. Remove from baking sheet to cool.
Step 4
Juice the Lemon (1/2) . You will need 1 teaspoon of juice.
Step 5
Mash Avocados (2) , Greek Seasoning (1/4 tsp) , and 1 teaspoon lemon juice. Set aside.
Step 6
Shred the Lettuce (1/2 pckg) .
Step 7
Halve the Grape Tomatoes (14) .
Step 8
Mix Vegan Mayo (1/3 cup) , Sriracha (1 tsp) , and Water (1 Tbsp) and set aside. The water thins it out for drizzling.
Step 9
When crust is mostly cool, spread avocado mixture evenly to edges. Top with shredded lettuce, tomato halves, and Black Olives (12) .
Step 10
Just before serving, drizzle with sriracha mayo, saving extra for dipping. Store leftovers in fridge. Enjoy!
