Tofu Tacos
1 pckg
Cooked Firm Tofu
I used Trader Joe's® Sriracha Flavored Baked Tofu
1 pckg
Whole Wheat Tortillas
I used Joseph’s Oat Bran Flax Whole Wheat Tortillas
1 cup
Shredded Green Cabbage
1/4 cup
Chopped Red Onions
to taste
Cherry Tomatoes
to taste
Oil
for frying
to taste
(optional)
5-ingredient Vegan Thai Peanut Dressing
1/2 cup
Canola Oil
1/4 cup
1/4 cup
Creamy Peanut Butter
1 Tbsp
Toasted Sesame Oil
1 Tbsp
(optional)

Directions

Step 1
Whisk Canola Oil (1/2 cup) , Soy Sauce (1/4 cup) , Creamy Peanut Butter (1/4 cup) , Pure Maple Syrup (1/4 cup) , Toasted Sesame Oil (1 Tbsp) , Sesame Seeds (1 Tbsp) together until blended and set aside.
Step 2
Slice the Firm Tofu (1 pckg) piece into 6 long slices. Add a little Oil (to taste) to pan and cook about 2 to 3 minutes each side of tofu.
Step 3
Steam the Sweet Corn (2 ears) in a covered dish in 2 inches of water in the Panasonic Microwave Oven for 3 to 5 minutes until cooked.
Step 4
Cut corn off of the cob, fill Whole Wheat Tortillas (1 pckg) with tofu, corn, Green Cabbage (1 cup) , Red Onions (1/4 cup) , Fresh Cilantro (to taste) , and Grape Tomatoes (to taste) and top with peanut dressing. Cooking results may vary depending on microwave oven used.
