Avocado Rice

Medium Avocado , diced
1/2 tsp

Salt and Pepper
1 cup

Salad
2 handfuls

Nectarines , sliced
1 handful
Fresh Chives , chopped
1/4 cup
Feta Cheese

Directions

Step 1
In a medium bowl, mash the Avocado (1) with the Apple Cider Vinegar (1 Tbsp) , Paprika (1/2 tsp) , and Salt and Pepper (to taste) .
Step 2
Fold into the Wild Rice (1 cup) and Brown Rice (1 cup) until well combined.
Step 3
Pile the avocado-rice onto a salad platter or bowl, then layer on the Arugula (2 handfuls) , Roasted Chicken (1/4) , Green Bell Pepper (1/2) , Nectarines (2) , and Fresh Chives (1 handful) .
Step 4
Top with Feta Cheese (1/4 cup) and serve.
