This recipe makes about 1 quart of relish. I like to transfer it to a jar with a lid for chilling and storing.

In a large bowl, combine the Whole Kernel Corn (2 3/4 cups), Jalapeño Peppers (2), Red Onion (1/2 cup), Red Bell Pepper (1/2) and Garlic (2 cloves). Set aside.

In a small sauce pan, combine Water (1/2 cup), Apple Cider Vinegar (1/2 cup), Brown Sugar (1/4 cup), Curry Powder (1/2 tsp), Sea Salt (1/2 tsp), Ground Black Pepper (1/2 tsp). Heat on the stove to a low boil, stirring frequently until the sugar has dissolved.
