Author's Notes

This recipe makes about 1 quart of relish. I like to transfer it to a jar with a lid for chilling and storing.

Cooking Instructions

Step 1
In a large bowl, combine the Whole Kernel Corn (2 3/4 cups) , Jalapeño Peppers (2) , Red Onions (1/2 cup) , Red Bell Pepper (1/2) and Garlic (2 cloves) . Set aside.
Step 2
In a small sauce pan, combine Water (1/2 cup) , Apple Cider Vinegar (1/2 cup) , Brown Sugar (1/4 cup) , Curry Powder (1/2 tsp) , Sea Salt (1/2 tsp) , Ground Black Pepper (1/2 tsp) . Heat on the stove to a low boil, stirring frequently until the sugar has dissolved.
Step 3
Pour the vinegar and spice mixture over the corn mixture. Serve and enjoy!
