In a large bowl, combine the Whole Kernel Corn (15 ounce), Jalapeño Pepper (2), Red Onion (1/2 cup), Red Bell Pepper (1/2) and Garlic (2 clove). Set aside.
In a small sauce pan, combine Water (1/2 cup), Apple Cider Vinegar (1/2 cup), Brown Sugar (1/4 cup), Curry Powder (1/2 teaspoon), Sea Salt (1/2 teaspoon), Ground Black Pepper (1/2 teaspoon). Heat on the stove to a low boil, stirring frequently until the sugar has dissolved.
Pour the vinegar and spice mixture over the corn mixture. Serve and enjoy!
