Store any leftover filling or lettuce separately in airtight containers in the fridge. Leftovers should be fresh for up to 4-5 days.

Cooking Instructions

Step 1
Preheat a large nonstick skillet over medium heat. Add Olive Oil (2 Tbsp) , Yellow Onion (1) , and Garlic (2 cloves) . Cook until softened, about 3 minutes.
Step 2
Add in Chicken (1.3 lb) , Zucchini (1) , Carrots (1/2 cup) , Salt (to taste) , and Ground Black Pepper (to taste) . As the meat cooks, break it apart into crumbles.
Step 3
While the meat is cooking, stir Sesame Oil (1/2 Tbsp) , Rice Vinegar (1 Tbsp) , Soy Sauce (2 Tbsp) , and Honey (2 Tbsp) together in a small bowl.
Step 4
Once the chicken is thoroughly cooked, pour in sauce and cover to simmer for 5-7 minutes.
Step 5
Right before serving, stir in Bean Sprouts (3/4 cup) , Scallions (1 bunch) , Toasted Cashew Nuts (1/2 cup) , and Fresh Cilantro (to taste) . Scoop into Lettuce Cups (to taste) and serve.
