Author's Notes

Store any leftover filling or lettuce separately in airtight containers in the fridge. Leftovers should be fresh for up to 4-5 days.

Preheat a large nonstick skillet over medium heat. Add Olive Oil (2 Tbsp), Yellow Onion (1), and Garlic (2 cloves). Cook until softened, about 3 minutes.

Add in Ground Chicken (1.3 lb), Zucchini (1), Carrot (1/2 cup), Salt (to taste), and Ground Black Pepper (to taste). As the meat cooks, break it apart into crumbles.

While the meat is cooking, stir Sesame Oil (1/2 Tbsp), Rice Vinegar (1 Tbsp), Soy Sauce (2 Tbsp), and Honey (2 Tbsp) together in a small bowl.

Once the chicken is thoroughly cooked, pour in sauce and cover to simmer for 5-7 minutes.

Right before serving, stir in Bean Sprouts (3/4 cup), Scallion (1 bunch), Toasted Cashew Nuts (1/2 cup), and Fresh Cilantro (to taste). Scoop into Butter Lettuce (to taste) and serve.
