Author's Notes

Store any leftover filling or lettuce separately in airtight containers in the fridge. Leftovers should be fresh for up to 4-5 days.

Preheat a large nonstick skillet over medium heat. Add Olive Oil (2 Tbsp), Yellow Onion (1), and Garlic (2 cloves). Cook until softened, about 3 minutes.

Add in Chicken (1.3 lb), Zucchini (1), Carrot (1/2 cup), Salt (to taste), and Ground Black Pepper (to taste). As the meat cooks, break it apart into crumbles.

While the meat is cooking, stir Sesame Oil (2 tsp), Rice Vinegar (1 Tbsp), Soy Sauce (2 Tbsp), and Honey (2 Tbsp) together in a small bowl.

Once the chicken is thoroughly cooked, pour in sauce and cover to simmer for 5-7 minutes.

Right before serving, stir in Bean Sprouts (3/4 cup), Scallion (1 bunch), Toasted Cashew Nuts (1/2 cup), and Fresh Cilantro (to taste). Scoop into Lettuce Cups (to taste) and serve.
