Preheat the oven to 350 degrees F (180 degrees C).

In a mixing bowl, add Cornbread Mix (1/2 box), Milk (3/4 cup), Egg (1), and Vegetable Oil (4 Tbsp). Prepare the cornbread according to the instructions on the package. Set aside.

In a skillet over medium heat, heat Olive Oil (2 Tbsp). Once hot, cook the Yellow Onion (1) and Red Bell Pepper (1) until soft for about 3 minutes.

Add Garlic (2 cloves) and stir for an additional minute.

Add Ground Beef (1 lb) and brown for about 3 minutes or until cooked through.

Continue stirring in Tomato Sauce (1 can), Whole Kernel Corn (1 can), Red Kidney Beans (1 can), Cayenne Pepper (as needed), Ground Cumin (1 tsp), Salt (to taste), and Ground Black Pepper (to taste). Bring to a simmer for about 10-15 minutes or until the liquid is reduced.

Transfer to a baking dish. Sprinkle the top with Shredded Sharp Cheddar Cheese (1 cup).

Pour the cornbread batter on top and bake in the oven for 20-25 minutes or until a toothpick inserted comes out clean.
