Cooking Instructions

Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
In a mixing bowl, add Cornbread Mix (1/2 box) , Milk (3/4 cup) , Egg (1) , and Vegetable Oil (1/4 cup) . Prepare the cornbread according to the instructions on the package. Set aside.
Step 3
In a skillet over medium heat, heat Olive Oil (2 Tbsp) . Once hot, cook the Yellow Onion (1) and Red Bell Pepper (1) until soft for about 3 minutes.
Step 4
Add Garlic (2 cloves) and stir for an additional minute.
Step 5
Add Ground Beef (1 lb) and brown for about 3 minutes or until cooked through.
Step 6
Continue stirring in Tomato Sauce (1 can) , Whole Kernel Corn (1 can) , Red Kidney Beans (1 can) , Cayenne Pepper (1/2 tsp) , Ground Cumin (1 tsp) , Salt (to taste) , and Ground Black Pepper (to taste) . Bring to a simmer for about 10-15 minutes or until the liquid is reduced.
Step 7
Transfer to a baking dish. Sprinkle the top with Shredded Sharp Cheddar Cheese (1 cup) .
Step 8
Pour the cornbread batter on top and bake in the oven for 20-25 minutes or until a toothpick inserted comes out clean.
Step 9
Enjoy immediately!
