Preheat the oven to 350 degrees F (180 degrees C).
In a mixing bowl, add
Cornbread Mix (1/2 box)
Milk (3/4 cup)
Vegetable Oil (1/4 cup)
. Prepare the cornbread according to the instructions on the package. Set aside.
In a skillet over medium heat, heat
Olive Oil (2 Tbsp)
. Once hot, cook the
Yellow Onion (1)
Red Bell Pepper (1)
until soft for about 3 minutes.
Garlic (2 cloves)
and stir for an additional minute.
Ground Beef (1 lb)
and brown for about 3 minutes or until cooked through.
Continue stirring in
Tomato Sauce (1 can)
Whole Kernel Corn (1 can)
Red Kidney Beans (1 can)
Cayenne Pepper (1/2 tsp)
Ground Cumin (1 tsp)
Salt (to taste)
Ground Black Pepper (to taste)
. Bring to a simmer for about 10-15 minutes or until the liquid is reduced.
Transfer to a baking dish. Sprinkle the top with
Shredded Sharp Cheddar Cheese (1 cup)
Pour the cornbread batter on top and bake in the oven for 20-25 minutes or until a toothpick inserted comes out clean.
