Heat Vegetable Oil (1 Tbsp) in a skillet over medium-high heat. Then add Yellow Onion (1) and Red Bell Pepper (1), and cook for 2-3 minutes or until soft.

Add Ground Beef (1 lb) and brown for about 5 minutes.

Add Diced Tomatoes (1 can), Zucchini (2) and season with McCormick® Taco Seasoning Mix (1/4 cup), Ground Cumin (1/2 Tbsp), Salt (to taste), and Ground Black Pepper (to taste). Bring to a simmer for 10-15 minutes or until the zucchini is tender and the liquid is reduced. Remove from heat.

Sprinkle the top right away with Shredded Mexican Cheese Blend (1 cup) and Scallions (to taste).
