Step 1
Heat

in a skillet over medium-high heat. Then add

and brown for about 5 minutes.
Step 3

Diced Tomatoes (1 can)

Zucchini (2)
and season with
Taco Seasoning (1/4 cup)

Ground Cumin (1/2 Tbsp)

Salt (to taste)

Ground Black Pepper (to taste)
. Bring to a simmer for 10-15 minutes or until the zucchini is tender and the liquid is reduced. Remove from heat.
Step 4
Sprinkle the top right away with
Shredded Mexican Cheese Blend (1 cup)
and
Scallions (to taste)
.
Step 5
Serve warm with
Tortilla Chips (to taste)
if desired!
