Cooking Instructions

HIDE IMAGES
Step 1
Heat Vegetable Oil (1 Tbsp) in a skillet over medium-high heat. Then add Yellow Onion (1) and Red Bell Pepper (1) , and cook for 2-3 minutes or until soft.
Step 2
Add Ground Beef (1 lb) and brown for about 5 minutes.
Step 3
Add Diced Tomatoes (1 can) , Zucchini (2) and season with Taco Seasoning (1/4 cup) , Ground Cumin (1/2 Tbsp) , Salt (to taste) , and Ground Black Pepper (to taste) . Bring to a simmer for 10-15 minutes or until the zucchini is tender and the liquid is reduced. Remove from heat.
Step 4
Sprinkle the top right away with Shredded Mexican Cheese Blend (1 cup) and Scallions (to taste) .
Step 5
Serve warm with Tortilla Chips (to taste) if desired!
