Fresh Cilantro (1/2 bunch)

Curry Powder (1 1/2 Tbsp)

Salt (to taste)

Ground Black Pepper (to taste)
. Keep stirring for 8-10 minutes or until the vegetables are soft, and the liquid is reduced and thickened. Remove from heat.
Step 4
Transfer to a serving bowl and garnish with cilantro. Enjoy it with your favorite main dish or
