In a pan over medium-high heat, heat Olive Oil (3 Tbsp). Once hot, add Red Onion (1), Red Bell Pepper (1), and Green Bell Pepper (1) and stir for about 3-4 minutes or until slightly soft.

Add in Carrots (2) and continue stirring for 2 minutes.

Add Diced Tomatoes (1 can), Baked Beans (1 can), Fresh Cilantro (1/2 bunch), Curry Powder (1 1/2 Tbsp), Salt (to taste), and Ground Black Pepper (to taste). Keep stirring for 8-10 minutes or until the vegetables are soft, and the liquid is reduced and thickened. Remove from heat.

Transfer to a serving bowl and garnish with cilantro. Enjoy it with your favorite main dish or Sourdough Bread (to taste) if desired!
