Cooking Instructions

Step 1
In a pan over medium-high heat, heat Olive Oil (3 Tbsp) . Once hot, add Red Onion (1) , Red Bell Pepper (1) , and Green Bell Pepper (1) and stir for about 3-4 minutes or until slightly soft.
Step 2
Add in Carrots (2) and continue stirring for 2 minutes.
Step 3
Add Diced Tomatoes (1 can) , Baked Beans (1 can) , Fresh Cilantro (1/2 bunch) , Curry Powder (1 1/2 Tbsp) , Salt (to taste) , and Ground Black Pepper (to taste) . Keep stirring for 8-10 minutes or until the vegetables are soft, and the liquid is reduced and thickened. Remove from heat.
Step 4
Transfer to a serving bowl and garnish with cilantro. Enjoy it with your favorite main dish or Sourdough Bread (to taste) if desired!
