Add Flat Rice Noodles (10 oz) and ½ Tbsp of Sweet Soy Sauce (1/2 Tbsp) in a mixing bowl. Use a tong or chopstick to mix until well combined.

To a wok over medium-high heat, add Vegetable Oil (1 Tbsp). Once hot, add Garlic (3 cloves). Cook until fragrant. Then add Boneless, Skinless Chicken Breasts (8 oz) and cook for about 2-3 minutes.

Add the Chinese Broccoli (4 oz) stems and stir fry for about a minute.

Push the chicken and vegetables to the side of the pan. Add Vegetable Oil (1/2 Tbsp) followed by Eggs (2), but do not stir right away. Wait for about 15 seconds, or until they start to cook through, then you can stir.

Add noodles, Chinese broccoli leaves, Sweet Soy Sauce (1/2 Tbsp), Light Soy Sauce (1 Tbsp), Oyster Sauce (1 Tbsp), Granulated Sugar (1 tsp), and Freshly Ground Black Pepper (to taste). Roughly stir and let them sit for a bit (15-30 seconds, depending on the heat) to create the charred mark from the caramelized sweet dark soy sauce, then stir. Repeat this process a couple more times until everything is cooked.

Serve on a plate. Sprinkle fresh ground black pepper on top. Serve hot with Crushed Red Pepper Flakes (to taste), Chilli Vinegar (to taste), Fish Sauce (to taste), and Granulated Sugar (to taste) on the side for personal preference seasoning, if desired.
