Step 1
Preheat the oven to 350 degrees F (180 degrees C).

To prepare the filling, add the
Apples (1 cup)

in a saucepan. Cook over medium heat until fruit is soft; about 4-5 minutes. Set aside.

to a mixing bowl. Use a whisk to mix until combined.

In a separate large mixing bowl, add

Vanilla Extract (1 tsp)
. Mix until well combined.

Fold the dry ingredients into the wet mixture. Mix until thoroughly incorporated.

Spread half of the batter into the greased baking dish, then top with the cooked rhubarb and apple. Spoon over the remaining batter.

Then, layer the

Rhubarb (2 stalks)
over the top. Sprinkle with
Sliced Almonds (1/4 cup)
and
Demerara Sugar (1 Tbsp)

Bake for 50-60 minutes, until golden brown and the toothpick inserted in the center come out clean.
