Cooking Instructions

Step 1
Preheat the oven to 350 degrees F (180 degrees C).
Step 2
To prepare the filling, add the Apples (1 cup) , Rhubarb (1 cup) , Fresh Raspberries (1/2 cup) , and Granulated Sugar (3 Tbsp) in a saucepan. Cook over medium heat until fruit is soft; about 4-5 minutes. Set aside.
Step 3
Add the All-Purpose Flour (1 cup) , Almond Meal (1 cup) ., Salt (1/2 tsp) , Ground Cinnamon (1/2 tsp) , and Baking Powder (1/2 Tbsp) to a mixing bowl. Use a whisk to mix until combined.
Step 4
In a separate large mixing bowl, add Butter (1/2 cup) , Eggs (2) , Greek Yogurt (1 cup) , Granulated Sugar (1 cup) , Orange Zest (1) , and Vanilla Extract (1 tsp) . Mix until well combined.
Step 5
Fold the dry ingredients into the wet mixture. Mix until thoroughly incorporated.
Step 6
Spread half of the batter into the greased baking dish, then top with the cooked rhubarb and apple. Spoon over the remaining batter.
Step 7
Then, layer the Apple (1) and Rhubarb (2 stalks) over the top. Sprinkle with Sliced Almonds (1/4 cup) and Demerara Sugar (1 Tbsp) .
Step 8
Bake for 50-60 minutes, until golden brown and the toothpick inserted in the center come out clean.
Step 9
Slice and serve with Vanilla Ice Cream (to taste) .
