Heat the Olive Oil (2 Tbsp) in the large pot over medium heat. Cook Garlic (2 cloves) and Yellow Onion (1) until fragrant and translucent.

Add Carrot (1), Celery (1 rib), Dried Thyme (1/2 tsp), Ground Ginger (1/2 tsp), Salt (to taste), and Ground Black Pepper (to taste). Cook for about 3-5 minutes.

Add French Green Lentils (2 cups), Rotisserie Chicken (8 oz), and Low-Sodium Chicken Broth (6 cups). Cook for about 20-30 minutes or until the lentils cook. Make sure to check the seasoning before serving.

Scoop the soup into a serving bowl. Sprinkle Fresh Parsley (1 stalk) and a squeeze of Lemon (1) on top.
