Author's Notes

Breadfruit should be soft but not mushy after boiling.
For extra flavor, add a pinch of cayenne or Scotch bonnet.
Bake until the top is golden brown for the best texture.
Serve with jerk chicken, curry goat, or grilled fish.

Cut the Breadfruit (1) into chunks and boil in salted water for 20-25 minutes until tender. Drain and mash.

Preheat oven to 350 degrees F (175 degrees C).

In a saucepan, melt Butter (3 Tbsp) over medium heat. Add Onion (1/2) and Garlic (2 cloves), sautéing until soft.

Stir in Evaporated Milk (1 cup), Shredded Cheddar Cheese (1 cup), Grated Parmesan Cheese (1/2 cup), Salt (1/2 tsp), Ground Black Pepper (1/2 tsp), Paprika (1/2 tsp), Dried Thyme (1/2 tsp), and Ground Nutmeg (1/4 tsp). Cook until cheese melts.

Remove from heat and mix in mashed breadfruit and beaten Eggland's Best Classic Egg (1) until smooth.

Transfer to a greased baking dish, smoothing the top.

Sprinkle Breadcrumbs (1/2 cup) evenly over the pie.
