Author's Notes

Green seasoning is a Caribbean herb blend—use store-bought or homemade.
For extra heat, slice the Scotch bonnet before adding.
Leftovers taste even better the next day.
Serve with rice and peas for a classic island meal.

Season the Chicken (2 lb) with Green Seasoning (2 Tbsp), Salt (2 tsp), Ground Black Pepper (1/2 tsp), Paprika (1/2 tsp), Ground Allspice (1/2 tsp), Soy Sauce (2 Tbsp), and Worcestershire Sauce (1 Tbsp). Let marinate for at least 30 minutes.

Heat Vegetable Oil (2 Tbsp) in a large pot over medium heat. Add Brown Sugar (2 Tbsp) and let it caramelize to a deep brown color.

Carefully add the chicken pieces, turning to coat in the caramelized sugar. Brown for 5 minutes.

Add Onion (1), Garlic (3 cloves), Red Bell Pepper (1/2), Fresh Thyme (2 sprigs), Diced Tomatoes (1 cup), and Tomato Paste (1 Tbsp). Stir well.

Pour in Chicken Broth (1 cup) and add the Scotch Bonnet Pepper (1) (whole or chopped for extra spice).

Cover and simmer for 40-45 minutes, stirring occasionally, until chicken is tender and the sauce thickens.
