Author's Notes

Marinate goat for at least 4 hours, but overnight is best.
Slow-cooking allows the flavors to develop fully.
Serve with white rice, rice and peas, or roti.
Adjust the Scotch bonnet for spice preference.

Rinse Goat Meat (2 lb) with Lime Juice (2 Tbsp) and pat dry.

Season with Salt (1 Tbsp), Ground Black Pepper (1/2 tsp), Curry Powder (2 Tbsp), Ground Turmeric (1 tsp), Ground Allspice (1 tsp), and Green Seasoning (1 Tbsp). Marinate for at least 4 hours.

Heat Vegetable Oil (3 Tbsp) in a large pot over medium heat. Add Onion (1), Garlic (3 cloves), Fresh Ginger (1 in), and Fresh Thyme (1 sprig). Sauté until fragrant.

Add the goat meat and brown on all sides for 8-10 minutes.

Pour in Beef Broth (2 cups) and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally.

Add Coconut Milk (1 cup), Scotch Bonnet Pepper (1), and Potatoes (2). Simmer for another 30 minutes until the sauce thickens.
