Author's Notes

To make the recipe even simpler, substitute the vegetables for a frozen vegetable medley. Sauté the medley to replace steps 1-2 of the veggie scramble and continue the remainder of the recipe.

Toast Whole Grain Bread (2 slices). Spread mashed Avocado (1) evenly over each slice. Season with Kosher Salt (1 tsp) and Simply Organic Black Pepper, Medium Grind (to taste). Add optional Crushed Red Pepper Flakes (to taste) or everything bagel seasoning. Set aside.

Heat Olive Oil (1 tsp) or butter in a nonstick skillet over medium heat. Add Red Bell Peppers (4 Tbsp), Onions (4 Tbsp), Mushrooms (4 Tbsp) and Zucchini (4 Tbsp). Sauté for four to five minutes until vegetables are softened.

Add Fresh Spinach (1 1/2 cups) and Cherry Tomatoes (4 Tbsp) to the skillet. Cook for one to two minutes until spinach wilts and tomatoes are slightly softened.

Pour Eggland's Best Liquid Egg Whites (1 cup) over the vegetables. Stir gently and cook for two to three minutes until egg whites are fully set but still soft. Sprinkle Shredded Cheese (2 Tbsp) on top, if using, and allow to melt slightly.

Assemble the dish. Spoon the veggie scramble over the prepared avocado toast. Serve immediately.
