These tasty cheese & bacon broccoli bites are a perfect side dish or make them as an appetizer for your next party. Either way, they are sure to please!

Light Shredded Cheese Blend

Preheat oven to 350 degrees F (180 degrees C), spray a 24 mini muffin pan.
Cook your Bacon (6 slices) on the stove and set aside. Place Frozen Broccoli (3 cups) in a microwave safe dish and add 2 Tablespoons of water, cover and cook for 5 minutes. Chop broccoli up into very small pieces.
Crumble up your cooked bacon slices. Mix them with cooked broccoli, Panko Breadcrumbs (1/2 cup), Cake Flour (2 Tbsp), Light Shredded Cheese Blend (2/3 cup) and Parmesan Cheese (2 Tbsp) in a bowl.
In the mixture add the Eggs (2), Salt (1 dash), and Ground Black Pepper (1 dash). Mix them well.
Use a spoon to fill the mini muffin pan with the mixture, pat down a bit with your spoon.
Bake in the oven for 15 minutes then turn them over.
Bake the other side for another 10 minutes. Serve with your favorite dip. 2 broccoli bites is 1pp. Enjoy!
