Preheat oven to 350 degrees F (180 degrees C), spray a 24 mini muffin pan.
Cook your Bacon (6 slice) on the stove and set aside. Place Frozen Broccoli (3 cup) in a microwave safe dish and add 2 Tablespoons of water, cover and cook for 5 minutes. Chop broccoli up into very small pieces.
Crumble up your cooked bacon slices. Mix them with cooked broccoli, Panko Breadcrumbs (1/2 cup), Cake Flour (2 tablespoon), Light Shredded Cheese Blend (2/3 cup) and Parmesan Cheese (2 tablespoon) in a bowl.
In the mixture add the Egg (2) and Salt and Pepper (1 dash). Mix them well.
Use a spoon to fill the mini muffin pan with the mixture, pat down a bit with your spoon.
Bake in the oven for 15 minutes then turn them over.
Bake the other side for another 10 minutes. Serve with your favorite dip. 2 broccoli bites is 1pp. Enjoy!
