Step 1
Prepare your ingredients, and preheat the oven to 350 degrees F (180 degrees C). Grease, spray, or line with parchment paper a baking pan or cupcake tins.

In a large bowl, whisk the
All-Purpose Flour (2 cups)

Granulated Sugar (2 cups)
,
Dark Cocoa Powder (1/2 cup)
,
Ground Cinnamon (1/2 Tbsp)
,
Baking Powder (1 tsp)
,
Baking Soda (1 tsp)
, and
Salt (1 tsp)
.
Step 3
In another bowl, whisk
Eggs (2)
,
Greek Yogurt (3/4 cup)
,
Vegetable Oil (1/4 cup)
, and
Vanilla Extract (1/2 Tbsp)
until blended.
Step 4
Add the flour mixture, stir just until moistened.
Step 5
Stir in shredded
Zucchini (2 cups)
.
Step 6
Transfer batter to pan and bake. Check periodically with a toothpick until it comes out clean. Cool completely on a wire rack.
Step 7
Dust with powdered sugar and serve, or top with chocolate glaze for frosting (see glaze recipe)!
