Prepare your ingredients, and preheat the oven to 350 degrees F (180 degrees C). Grease, spray, or line with parchment paper a baking pan or cupcake tins.
In a large bowl, whisk the All-Purpose Flour (2 cup), Granulated Sugar (2 cup), Dark Cocoa Powder (1/2 cup), Ground Cinnamon (1 1/2 teaspoon), Baking Powder (1 teaspoon), Baking Soda (1 teaspoon), and Salt (1 teaspoon).
In another bowl, whisk Egg (2), Greek Yogurt (3/4 cup), Vegetable Oil (1/4 cup), and Vanilla Extract (2 teaspoon) until blended.
Add the flour mixture, stir just until moistened.
Stir in shredded Zucchini (2 cup).
Transfer batter to pan and bake. Check periodically with a toothpick until it comes out clean. Cool completely on a wire rack.
Dust with powdered sugar and serve, or top with chocolate glaze for frosting (see glaze recipe)!
