Cooking Instructions

Using a grater, shred the Zucchini (1 cup). Place zucchini in a colander and press out as much moisture as you can. Set aside.
2.
Preheat a waffle iron. Whisk Unbleached All Purpose Flour (1 cup), Salt (1/2 tsp), Baking Powder (2 tsp) and Simply Organic Cinnamon, Ground (1 tsp) in a large bowl.
3.
Melt Unsalted Butter (4 Tbsp). Add Milk (1 cup), Eggland's Best Classic Egg (1) and melted butter and mix until combined. Fold in zucchini and Fresh Blueberries (1 handful).
4.
Using a 1/2 cup measuring cup, scoop batter up and pour onto preheated waffle iron and cook according to your iron's instructions.
5.
Place a scoop of Lemon Ice Cream (to taste) on top and enjoy!
